lunch
i have too many avocados and some very wisened peaches so i thought i better use up one of each for lunch today.
avocado & peach salad with mint (for 1)
1 avocado, sliced lengthways into 8
1 'over its' best'/wisened peach, skinned & diced
1 spring onion, finely sliced
4 small tomatoes (yellow, orange, green & red), quartered lengthways
2 tiny mozzarella balls, quartered (also leftovers), a goat or sheep cheese would be better.
garden herbs: mint, chive & thyme
make a vinaigrette with virgin olive oil, lemon juice, 2 crushed smoked garlic cloves, smoked salt & black pepper, a touch of cayenne.
arrange everything in a soup bowl, pour over the vinaigrette, put some flowering herbs to make it look pretty, and then splash a small amount of balsamic vinegar on top.
it was very filling - so no bread needed for me - but if you added another peach and some more baby tomatoes it would definitely make a lunch for 2 with some ciabatta.
