Totally improvised... Sizzle onion in olive oil, then lower fire to add chunks of eggplant, salt and pepper. Next come the peppers and zucchini, soy sauce, oyster sauce, coriander. Let simmer for about thirty minutes, with a cover. Add chicken stock, stoke fire up to boil the stock down. Cook the mushrooms in a frying pan, first with butter, then with a bit of the vegetable and chicken stock sauce. Reduce completely. Eat. :-)
