Another Meal From Lebanon

and so easy to make ..Prepared early this morning .Am I glad it since home rather tired and voila here is my meal ....Fresh fruit for afters ...Recipe below should you feel tempted .


Sweet and Sour Courgette ( Zucchini)

120ml / 4fl oz olive oil
1 red onion finely chopped
900g / 2lb courgettes /zucchini ,scrubbed , trimmed & cut into
thin 5cm / 2inch strips .
2 to 4 tbspns lemon juice ( see note )
30ml /2tbspns caster sugar
5ml/ 1tspn coriander seeds
5ml / 1tspn dill seeds
2.5ml / 1/2 tspn cinnamon
salt & pepper
30ml / 2tbspns pine nuts, toasted
30ml /2tbspns currants

Heat oil in a frying pan and saute onion gently about 5 mins util soft but not coloured .
Stir in courgettes and cook further 10 mins until also softened .
Pour in lemon juice , stir in sugar, coriander, dill , cinnamon ( salt pepper to taste )
Simmer for about 5minutes.
Then add pine nuts and currants& cook for 4to 5 mins until the liquid has evaporated and the courgettes are glazed .Chill for for several hours before serving -

serve as a salad -- with your protein -- as a main
you can use white wine vinegar and lemon for a Francophile version
Many prefer all lemon juice for an Arabian flavour
