Low-GL elevenses
Well, I have been back on my Low-GL eating regime for a full week now and you can see that I've changed my elevenses.
This is an extra-mild homemade latte (coffee beans, not instant) without sweetener plus two small homemade Almond Shortbread slices. The almond shortbread is made with ground quinoa instead of wheat flour plus ground almonds and is utterly delicious, although I did vary the recipe a little to include half the quantity of coconut sugar instead of xylitol.
Anyway, I'm feeling pretty perky after a week - bearing in mind that for the first four days or so I'm aware that I do tend to go a bit quiet as I detox from sugars and previously higher caffeine intake. However, not in a bad way, just not quite so plumptious. But I know from my 2009 detox that this is very shortlived and after that I will start bouncing around like Tigger!
Our "usual route" up and around the cathedral was an improvement today as I managed to climb the steps up to the south side of the cathedral in one go without stopping to catch my breath half way up. I've promised myself that when I can actually get to the top of the steps in one hit without being breathless at the top, I will go back down again and repeat the climb. Still, one step at a time, eh?
