Sous vide Salmon with chard-lemon pesto, golden beets, and salad. Wine: Rusack Chardonnay Santa Barbara County 2017.
Every part of this dinner, including the wine, was excellent. I’ve never tried chard raw before, much less in a pesto, but it works very well.
