Crusted Chicken

This was a delicious supper. It's another of Mr Oliver's (I have a fair few of his books and even my culinary challenged other half can negotiate the recipes.)

Served with a garden salad and beetroot! Mmmm

Now I was tucking into this and my mind immediately thought about:

Fishy or Veggie alternatives.

Firstly the crust would go well on any firm white or meaty fish. But it would also work well with portobello mushrooms, stuffed with goats cheese or ricotta and topped with this. I'd also like to try it on top of baked butternut squash. It's very versatile.


N.B. British recipe states Jacob's Cream Crackers not saltines.
