Fusilli alla Romana (alla me!)

Trying to replicate a dish we used to eat at a restaurant in Maidenhead. Sadly it was taken over some years ago and the price went up while the quality went down. Our favourite dish disappeared from the menu too. So, I'm having another go at it today. I've done it before but not in years now so hope I remember how it went!
