Spiced rhubarb
3lb of rhubarb, vinegar, sugar and spices boiling up to make a few jars of spiced rhubarb.
Perfect with cold meats, ice cream and in Greek yoghurt.

Spiced rhubarb
6 fl oz malt vinegar
6 fl oz water
1 teaspoon allspice berries
1/2 teaspoon nutmeg
4 cloves
1/2 teaspoon cinnamon
2lb sugar
3lb rhubarb in 1 inch pieces
Heat vinegar, water, spices and sugar in a pan, stirring to dissolve the sugar. Simmer for 15 minutes. Strain off the whole spices, and return the syrup to the saucepan. Add the rhubarb and cook gently, uncovered, until the mixture is thick. Pour into jars and seal.
