it's been a cooking day
Baked Lobster Pot
2 x small lobsters*, picked
a knob of butter
the zest of half a lemon
1 clove of garlic, pressed
freshly ground black pepper
a dribble of cream
a scattering of bread crumbs
& the same of grated Parmesan cheese
finely chopped parsley and chives for sprinkling
melt the butter in a pan, when sizzling add the chopped lobster meat.
add the garlic & black pepper
put the lobster in a small dish
pour some double cream on top (a generous tablespoon)
then the breadcrumbs, followed by the Parmesan cheese.
grill until gently bubbling.
top with parsley & chives.
* n.b. lobster is not normally on our menu, but in these times the fish markets are closed and there is crustacea for the cookings, as the Radish might say.
the two i got today were one clawed, and at a fiver each, made a luxury lunch.
i also made the kindly Mister enough Lemon Drizzle to last him a week.
so i deserved the lux lunch.
