Success!
I found a new recipe for gluten free scones this afternoon. Instead of kneading and rolling these just get mixed and scooped onto a baking tray using an ice cream scoop. I'm really pleased with the result, these actually taste like scones and aren't horribly heavy and dense which is often the way GF baking turns out.
I'm still finding it hard to settle to anything this week, I hope after another few days that will improve, there's loads of things I could be doing. Hope you're all in good health.
