Crumb
It is just a placeholder blip really as it has been a busy day but I was pleased with how aerated the last sourdough bake was - it is what bakers call the 'crumb', the holes in each slice. I spent the morning in the shop repairing the clock that was in yesterday's blip. It was the most heavily worn clock I have worked on in twenty years and needed seven bushes and more remedial work. At least it is going now. Two more clocks came in which is good as the shop is bound to go quiet soon. I am off out for a meal with friends. I think it will be my last outing to a restaurant for a while now corona cases are mounting as I shall heed the advice to keep a low profile. I think it likely that France will close its borders so I shall be forced to rethink.
