Enchiladas with a difference

Made with mince, tonight's Enchiladas. Lovely they were. Kate said "it was lovely, just like your lasagna only nicer". Phil said "better than last nights lamb curry love". My sis who doesn't eat much, "is there any more I only had a bit". So looks like it was a big hit. The blip is just before it went in the oven.

Had a lovely morning with The Wednesday Mum's over at Amanda's house where she made us bacon butties and we watched Mrs Brown's Boys on DVD whilst flicking through the new Avon book.

Decided to use the car this afternoon. Snow and ice melting nicely now and even the back roads are starting to clear. Wanted to try it as Willow is at the vets tomorrow for a check up over her Arthritis.
