I thought I’d try a variation to my usual sourdough making, using a recipe that doesn’t knead the dough; instead you fold it every half-hour for a few hours and let it rest another good long while before the proving stage. All well and good but without the kneading the dough was always looking a bit wet to me and sure enough when I dropped it from the proving basket it lost its shape completely! So I ended up with a really tasty, very crusty sourdough flatbread. Next time I’ll ignore the recipe’s quantities and fall back on good old experience!
I suppose the shape was apt enough though, earlier on we’d been out at friend’s for a great pancake brunch. It’s that time of year.
