Last 7 days of vegetable loaded meals

Another week’s evening meals: all with at least 750g of low white carbohydrate vegetables and all followed by a sweet of: summer berries or fresh blueberries; stewed prunes&apricots topped with oatbran and full fat Greek yogurt. All of the main courses had 250g of boiled beetroot drizzled with balsamic vinegar. Apart from beetroot, onion, leek and kale the rest of the veg was yellow label or Aldi’s 6 (weekly specials). More animal protein than usual with yellow label offers on stewing lamb and roast chicken and only two had cheese as the main protein source.
