Thai pea and spinach soup

Today I made a soup from these ingredients and took photos at every stage in square and landscape format for our daughter as part of her work. We obviously had to try it for lunch and it was delicious!
For our Christmas present our daughter bought us an experience which was a meal at a restaurant in Auckland but it was totally in the dark. We were served by waiters who were totally blind. We sat with another couple and it was astonishing how you could have such an interesting conversation with people you couldn’t see. We had a 3 course meal with wine matching. It was a delicious meal but we had no idea what we were eating except by feel and taste. I have to admit that I felt with my left hand and used a fork in my right hand. Our waiter was Indian brought up in Fiji, moved to New Zealand at the age of 20 and was blinded as the result of a road accident at the age of 23. He now plays in multiple sports and is soon going to South Africa to participate in a cricket match. All in all, the evening was a wonderful and humbling experience.
