Orange peel today ...
.... Marmalade tomorrow!
It's very flattering that my marmalade is very much in demand, but it does take a good hour just to prepare one load of it ( hopefully I'll get 7 jars out of the 2lb of oranges and 2 lemons that I've lovingly squeezed and chopped tonight ). After leaving the peel to soak in 4 pints of water over night, tomorrow I need to cook it til it softens and then add the juice and some sugar. Then it'll be boiled til it reaches setting point and poured into hot jars ... at which point I shall probably try to get a blip!
