Soup - Italian Tomato

The Basics
1 Onion
1 Carrot
Celery (1 stock)
Garlic 3 cloves
Basil (dry) large sprinkle
Green pesto (dollop)
Passata (x 4)
Veg stock cubes (x 4)
Sugar (1 tbs)
cream for serving
The Magic
Fry the onion, carrot, celery in garlic until soft.
Add the passata, four veg stock cubes, basil and pesto.
Simmer for 20 mins.
Add 1 table spoon of sugar.
Add water to get the right thickness which suits you.
Season to taste.
When you serve pour a wee bit of cream on each portion.
