Rapeseed oil
The wonderful yellow of cold-pressed rapeseed oil. On Carrington Barns Farm, south of Edinburgh, they produce and harvest their own brand under the banner of Supernature. It is sold in bottles with beautiful art work of the plant captured in this backlit close-up. Unlike most oilseed rape grown in Scotland, it is a spring rather than a winter variety, harvested in September. No herbicides or fungicides are needed, so it fits perfectly with the ethos of sustainable farming. It is a great medium for cooking and sustains higher temperatures without degrading or producing toxic byproducts. For the health conscious, It has half the saturated fat of olive oil, is free of all trans-fats and is a natural source of vitamin E. (It can be ordered online.)
