Paella
I love cooking paella. It goes from a soupy, bubbly grainy pan to a big bowl of saffron rice with chorizo, chicken and prawns.
It's always tempting to blip the end result but this stage is my favourite. I love the anticipation and I get half an hour to enjoy a glass of red whilst the magic takes place.
