As well as opening the Galaxy chocolate Advent Calendar each evening, I am following the readings and prayers in Walk with me, a free gift from our Church.
I have been for a short neighbourhood stroll and it is very cold, crisp and sunny.
I will be writing our Christmas cards this afternoon.
The middle photo in the collage is an experimental Vegan meal I have made and enjoyed. I love all the ingredients and the meal can be made in about 20 minutes.
Sweat half a sliced red onion in a frying pan in some Extra Virgin Olive oil.
Wash, dry and then add half a bag of Curly Kale and gently move it about so it is reduced and cooked evenly. This contains plenty of iron, vitamin A, C, and folic acid.
Add some red pepper, sliced fresh ginger, pieces of garlic, mixed olives, fresh coconut pieces, and mixed Omega seeds, eg sunflower, pumpkin, linseeds, and sesame seeds.Try not to over cook it as it will destroy the vitamins.
Add salt and pepper and a squeeze of fresh lemon juice.
Slice a Clementine orange and place this around the dish.
Enjoy.
