Healthy hasselback potatoes

For when you need some proper food.

I've never made them before so followed my instinct rather than a recipe. They worked out rather well I thought.

I cooked them at the top of the oven with a chicken. It took an hour and a half in total at 200 degrees. 

After peeling and slicing them part of the way through I baked them blind for half of the time.

After turning the chicken I drizzled a little oil on each potato so they crisped up during the final cook. They have the crispiness of baked potatoes but a fraction of the calories.
