Sand Dabs

Parmesan crusted sand dabs with caper and butter sauce, green beans, and rice pilaf. Also visible are the remains of some oysters had as an appetizer.

Sand dabs are a small type of flounder found off the coast of the western U.S. This is only the second time I’ve had them,
but a rather like them (in general, I love flat fish like flounder and sole). This served as a birthday lunch a day early.
