‘Food’

Went to an excellent exhibition at the V&A today. The photo shows mushrooms growing on a medium rich in used coffee grounds from the V&A cafe, where visitors drink over 1,000 cups of coffee a day. The harvested mushrooms will be returned to the cafe as ingredients for some of their dishes. Apparently coffee grounds are rich in nutrients and using them to grow mushrooms is a small step towards farming in the cities that are overflowing with coffee but where soil is thin on the ground.
