Pork chop with pistachio aillade, forbidden rice, and radish green salad with radishes. Wine: Pisano Rio de los Pájaros Reserve Tannat 2017 (Uruguay).

This pistachio aillade is my favorite sauce for pork chops—it has been too long since I last made it.
