Leek and Tomato Tart
Another dish inspired by the ‘what to do with veg that wants using up’ question. But I’m quite pleased by how it’s turned out, particularly the fact that the pastry hasn’t cracked while taking it out of the tin.
(Top tip: use ready-made shortcrust, grate a bit of cheese over, fold in half and roll out again before using - makes a lovely crisp pastry).
