The Last Supper

My Dear Princess & Dear Fellows,

Caro is due to have her gastric bypass surgery this time next month. You may not know this, but before that she has to have a month of fasting. 

She has these little packets of stuff called Optifast that mix up into shakes. I'm not sure if she's allowed light meals on top, but my point is that today was her last day on big, heavy, satisfyingly, stodgy food. 

All week long I've been trying to make meals I know she enjoys. But being that today was her very last day, I said she could make a request. Bizarrely she requested Pita Pit for an early evening snack, followed by fishcakes with carrot and kumara mash. 

This was followed by Lamingtons after which she seemed very satisfied. 

Life-changing events are about to follow. I'm glad we got to finish this chapter on a weird-looking, hairy coconut cake.
