Taco Night!

We love Mexican food and it has been easy to convert my Mexican recipes to healthy ones. Tonight’s dinner was Parmesan tacos! I simply melted some Parmesan cheese in a non-stick skillet to make my Parmesan shells. Filled them with lean ground beef, chopped cherry tomatoes, diced avocado and a dash of cheddar cheese. It was delicious. Hope everyone has had a marvelous Monday. Enjoy my little taco joke!
