Shaking Beef
Vietnamese shaking beef on lettuce with cucumber tsukemono and bok choy sauerkraut. Wine: Despagne L’Onde Rythmique Lunaire 2016 (75% Cabernet Franc, 25% Merlot from Bordeaux).
The meat itself was inconsistent (some chewier, gristlier bits), but great flavor. The wine was lovely.
