A poppy field

I didn't know we had such fields in the Netherlands. Awesome! Yesterday, during my evening walk, I saw a red field in the distance, but I couldn't make out what it was. I decided on the same walk early morning, before work. Bringing my proper camera for better zoom.

Why would this be? What are poppies used for?
