Vegans look away now
I was on chef duty again and the is my share of 'lamb cutlets with crisp sourdough and yoghurt sauce' courtesy of Yotam Ottolenghi in the Guardian's fest mag of 11 May 19. It's a dish with lots of veg, gallons of olive oil, enough garlic to keep the vampires away for ever and all the green herbs you can think of (except coriander).
