It's about time I shared a recipe with you again!
How many of us don't eat cake or chocolate because we think it's unhealthy or puts on unwanted weight?
There is so much talk about gluten-free diets and eliminating sugar from our diets, so what do we do when we want to eat cake?
Here is a delicious flour-free recipe for you without white sugar!
Ingredients:
250 gr best quality black chocolate (minimum 70% cocoa)
50 grams butter (that is very little indeed)
50 grams of raw cane sugar (I use Sucanat). It's full of minerals
3 eggs, separated
Preheat the oven to 180°C (355 F)
Melt the chocolate over a bain-marie, add butter to melt. Remove from heat and add egg yolks, blending well.
Beat egg whites with a pinch of salt till firm and add the sugar until shiny and elastic. Add whites gently in stages, folding delicately with a metal spoon.
Put mixture into a 18cm (8 inches) lined and greased tin,
Bake in the middle of the oven for only 15 minutes (not more). The cake will remain soft and truffle-like. Allow to cool. It serves 8.
