Our French guest chooses the wines, Chablis and Bordeaux - Pomerol, no less! The halibut with mushrooms and puréed Jerusalem artichoke is excellent, but it’s the cheeses that make the biggest impression - especially an Italian blue cheese called “61” with a rind of pulped raspberry.
