200g butter
200g light soft brown sugar
4 eggs
300g SR flour
100g crystallised ginger chopped
100g raisins
50g mixed peel or other fruit
2 teaspoons baking powder
2 teaspoons ground ginger
1 teaspoon mixed spice
1 teaspoon ground cinnamon

Beat butter and sugar together then add eggs. Sift flour, spices and baking powder into bowl. Add fruit and mix all together.

20cm deep round casket in lined.
Bake at 160C for about 75 minutes or until a skewer comes out clean.
