Cullen Skink

How to make traditional Cullen skink (the parents are down visiting). I shall give their actual instructions in italics.

Place a large onion in a pan and just cover with boiling water and simmer for a hour. Bile a big ingin for an oor.

Dice some potatoes into small cubes and boil in the water in the pan until soft. Chap up some tatties intae wee bities and bile them till they are saft.

Add a can of evaporated milk and stir in. Pouwer in a tinie o milk and gie it a good steer.

Haddock which has been smoked placed on top of the potatoes and milky water. Mak sure it is haddock nae whiting and it's smoked nae dyed. Pit on top o a thin else.

Leave to cook for a few minutes. The soup will thicken as the potatoes break up and the fish will naturally flake apart. Gie it a few meenties an the tatties will brak doon and so will the fish.

Season with pepper and possibly some salt depending on the fish. Pit in some pepper, fit kine do you hae? No nae that kine, this aine disnae work. Does it need sat? Put some in, NO nae that muckle! Fit hiv yih deen! It's aah sat noo, for goodness sake!

Give a good stir to mix and it is ready to serve with Orkney oatcakes. Gie it a good steer and at's it.
