Pancake Day.....!

Shrove Tuesday.......tradition has it that pancakes were made today to use up flour, milk, butter and eggs before Lent....
It often strikes me what did people eat during Lent as those four ingredients were nothing luxurious but more the staples of the basic diet back then....
However, it’s a tradition that we are quite happy to keep up in this house and this is my variation, a buttermilk pancake with a berry compote and serious splash of Coole Swan Irish Cream Liquer...really nice!!
Will make the regular crepe pancakes at the weekend when son and daughter are back.....!
