Vegan Curry

 
Today I was very honoured to have been given this lovely homemade vegan curry by a colleague of mine, who has been telling me all about his cooking. He grew up with vegetarian parents and uses a lot of his mum’s recipes. 
 
I am back to finishing work at earlier on a Tuesday now, which has been a lot better than my previous hours, giving me some time to breathe before going back out to swimming. My parents had the children from school and for tea and I got to enjoy this beautiful curry by myself before heading out.
 
I have told my colleague that I loved it and will be willing to taste any future recipes he wants to experiment with!
