Tricolore

Today saw a period of blazing sunshine, and while the temperature soared to a sub tropical 5 degrees C, there are still pockets of snow on the lawn.

I was inspired by this Spring-like warmth to make a salad of tomatoes, avocado and buffalo mozzarella.

Some might say silly....
