Mexican Vegan Salad

Greatly enjoyed preparing vegan buffet for my niece and her partner . In addition to the Mexican salad we had lentil curry , cauliflower and chick pea curry plus roasted veg with Mediterranean couscous . My other nieces produced an amazing vegan friendly chocolate cake and a strawberry/ kiwi fruit sorbet . Yummy .
