Precision

One of our friends took us to a renowned Singaporean restaurant Din Tai Fung( which has opened a branch in London this week!) They have a kitchen open to view which has around 10 chefs in it just making dumplings. The precision in making them is extreme, with each one having exactly 18 pleats. There is also an etiquette in eating them, First dipping them in vinegar and ginger, placing on a soup spoon, piercing a hole to let the juice out, and then eating them! Very delicious they were too.
