Pumpkin days

Mr D likes carving pumpkins. He bought one to carve this year forgetting we would be away at halloween ....so there it has sat for a month. At the weekend he decided to harvest the flesh, and I found myself with a huge pile of pumpkin to do something with. Yes I know, dreadful grammar! So yesterday I made Thai chicken and pumpkin curry, accompanied by some strange ‘I’m not going to like that’ type looks. He had seconds. It was yummy! So getting to today, I made a large pot of soup with the ingredients from yesterday’s curry plus a few extras.... And very tasty it was too!
