Beef Stew
Slaved all day making beef stew for supper tonight.
Actually, that's a bald faced lie! I had an appointment with the opthamologist this morning for my pre-op consultation for my cataract surgery on December 10th. They do various scans and take a multitude of measurements to determine the lens that will be implanted. After that, went to the grocery store and got what I needed for the beef stew. 20 minutes preparation time, and 12 minutes in the pressure cooker and supper was on. I am a great fan of pressure cookers. My mother had a 4 quart Mirro that she used almost daily. It was the one with the round weight with 5, 10, and 15 lbs. pressure. So, I pretty much grew up with them. Mine is one of the newer more advanced ones. They are much faster than the microwave, and everything that comes out of them tastes so much better. It's the only thing I use to cooked dried beans for chili and bean soups. Takes less than an hour and the beans come out perfect. Couldn't keep house without it!
