Roast Butternut Squash

After a day of being stuck on the bypass in the rain (meeting at Napier University) was lovely to come home to Mr P’s delicious risotto. He tells me that it’s part of a squash trilogy that he’s planning to cook.
Straight out again to a Quaker service (Peebles Churches Together event). Thechimp should know that I reflected silently for 30 mins!
