Low carb battenberg

I'm diabetic (type 2), and follow a few low carb pages on Instagram that are intermittently interesting.

However, I've started following a lady who publishes really interesting low carb recipes (https://www.instagram.com/diabetesandmeuk/), and I've been lucky enough today that mrsonthemount has tested out the low carb battenberg recipe for me.

I've only had a small sample, but it's delicious, and incredibly close to the traditional recipe.  It's one of my favourite cakes, and I can't remember having it in the last 10 years, so this is really fantastic.

I'm really looking forward to enjoying a "proper" slice after dinner.  :)
