Oh, and the lactaires délicieux that Angélique left round to us yesterday. She'd picked them up in the hills somewhere near Entrechaux. She'll not tell anyone where she finds them...top secret.

She showed us how to cut them yesterday to check for worms. Once you have them prepared and have cleaned off most of the dirt, steep them in tepid water for 30 minutes, drain them and put them in a large pan with a big pinch of sea salt on a moderate heat for 30 minutes. No water is to be added. Once the time is up, drain them and leave them overnight. To cook, put plenty of garlic, olive oil, parsley, salt and pepper in a pan and add the chopped mushrooms - cook (covered) for at least 1 hour.
