More courgettes

The glut of courgettes from the poly tunnel continues. This evening we had friends over for dinner and one of the courses had to be courgette themed.

These are courgette fritters, made with courgettes ,mozzarella, Parmesan , onion, chives and eggs.

They are, I have to say, very tasty.
