Pumpkin pie time!

Thanksgiving is coming up soon so pumpkin pie has been on my mind. I baked this pie last night but was too full after dinner to eat any. The pie went to the fridge untouched until breakfast this morning when I decided it'd be much nicer than toast with my coffee.

This is a completely dairy-free pie. I cheat with the pastry, it's ready made (vegan), I've not yet attempted making my own dairy-free pastry. I also cheat with the pumpkin and buy organic puree from Whole Foods. It's all very delicious and easy to throw together and bakes in about 75 minutes.
