Salt tears
After only one day, the olives are starting to ferment and I had to release the pressure from these jars. They are seeping salt everywhere. The leaves, by the way, are beautifully smelling lemon leaves (not bay) and we think they are there to add a bit of acidity as the process goes on. These jars are the ones that need to be left for 6 months without touching them. The others are left open and need to be stirred and another lot are hanging dry like staleg - tights (my old ones), but don't seem to be losing liquid yet.
Meanwhile, the usual hectic Wednesday, made a little easier by Ben getting a lift back from football, while Little Agu had his first lesson of piano for the academic year (returning with Ode to Joy) while I got dinner ready. For once, all in bed by a reasonable hour.
We are thinking of Nana Hickey, who is starting treatment today whilst grieving. It's all very hard, but Ben had a little chat to her and a smile. Medicine indeed.
