Smoked mackerel, orange & beetroot salad

This recipe popped into my inbox today. As is my way I pop some of them on to MrR.

As is also our way the lunch time stroll conversation invariably comes across what we are going to have for dinner that evening.

This looked relatively easy, the boys love mackerel, as it had potatoes in it it would just be a case of doing a non-fish thing for Es to have with the potatoes.

In the end it was just MrR and I that had the full blown recipe, the boys had mackerel, new potatoes and broccoli...a safer bet to ensure we get some vegetables in them.

Anyway this was very tasty and quite colourful and also easy to make, MrR informs me as he was back in the kitchen :-)
