With spinach

When I bought smoked haddock from Craster yesterday, we decided there was only one recipe we wanted to do - Delia's Smoked Haddock with Spinach and Chive Butter Sauce.

This is a recipe from Seafood in Winter (1995) - the only one of her books that isn't actually falling apart. It takes the two of us to make it, I can't think how one person could make it as everything has to be made at the same time - the spinach, the fish, the hollandaise sauce. It's one of those few times when we cook together. We still use the book to check, even though we have made it so many times. It's delicious. 

I always think the finished dish looks just like the picture - so I thought I would photograph it today.
