And he would be right!
Popped in for lunch at our favourite valley Italian winery and restaurant just as a demonstration of the fine arts of curing  prosciutto, coppa and pancetta was getting underway.
This is one the butcher had prepared earlier....18 months earlier!!

Isn't it wonderful when the unexpected happens.
